I love to cook, I love blending flavors and mixing them into delicious food. For my family, food is love. Our absolute favorite dinner is when we have our Greek night. It usually consists of grilled chicken, pita bread, hummus, tzatziki and the star is this pasta salad. It combines orzo pasta with fresh veggies and an herby vinaigrette for a punch of flavor.
Ingredients
- 12 ounces orzo pasta *see note about cooking
- 8 oz. Greek vinaigrette
- 10 oz. grape or cherry tomatoes halved
- 1/2 red onion diced
- 1/2 English cucumber diced
- 6 oz. feta cheese crumbles
- 6 oz. sliced feta olives
Instructions
- Cook orzo pasta according to package directions – Rinse after draining to stop the cooking. Let cool and drain completely
- Add pasta to a bowl and stir in half of the vinaigrette
- Add remaining ingredients and rest of the vinaigrette
- Season to taste with salt and pepper
Recipe Notes
- Go light on the salt and pepper because the olives and feta are pretty salty, taste as you go!
- I use English cucumber because it has less seeds, if you use a regular cucumber scrape out the seeds before chopping it.
- Add extra veggies. I have added diced red bell peppers and fresh herbs before.
