On Monday we made paninis and chips for dinner and here are the recipes, unfortunately I only have one picture, but it’s totally making my mouth water.
Now onto the good part {make sure to read the recipe notes and the equipment recommendations}
Steak and Avocado Panini
Ingredients
*Bread (of your choice)
*Thinly sliced (cooked) steak
*Shredded Medium Cheddar Cheese
*Shredded White Cheddar Cheese
*Thin Tomato Slices (seeded)
*Avocado Slices
*Red Onion Thinly Sliced
*Butter
Instructions
1- Heat Panini press or pan to high
2-Spread butter on slices of bread
3-Place 1 TBS cheese on bread, not on buttered side
4-Layer ingredients in this order (on top of cheese)

5-Add about 4-5 TBSP more cheese
6-Top with other piece of bread
7-Place in the press and remove when cheese is melted and bread is toasted golden brown
Side notes
*You can use just about any meat, just make sure it’s cooked and sliced thinly. Leftovers work great
*The avocado acts as a spread, so no mayo needed!
*I used a normal loaf of bread, but a cibatta or any rustic bread would work much better
Homemade Potato Chips
Serves 4-5 Adults
Ingredients
*3 Large Russet Potatoes
*Kosher Salt
*Vegetable Oil
Instructions
1- Pour oil into a heavy bottom stock pot, or dutch oven (these really work best) until it is about 2 inches deep
2-Heat on Medium-High until it reaches 350 degrees.
3- While the oil heats wash the potatoes and slice them
4- Slice potatoes with mandoline making sure they are no larger then 1/16 of an inch thick
5-Place potato slices into salted cold water RIGHT AWAY or they will brown
6-Remove potato slices from cold water and pat dry with paper towels (see note below)
7-When oil is heated (see note below) drop about 10 slices into the oil
8-Use a metal slotted spoon to stir around and flip potatoes for about 2 minutes
9-Remove from oil and drain on paper towels
10- Sprinkle with salt immediately
Side notes
*You can use another frying oil like peanut, but stay away from olive oil it can burn too easily
*You can use other root vegetables like sweet potato for awesome chips.
*Try seasoning the finished chips with a special spice rub or garlic powder and salt to kick it up!
*If you do not have a thermometer use a wooden spoon to check if your oil is hot enough. Place the end of a wooden spoon handle in the oil, if it bubbles form around it then the oils hot enough.
*USE A DEEP PAN! The oil will bubble up quite a bit when you add the potatoes, and you don’t want a fire or a boil over of hot oil.
*Make sure the potato slices are very dry. Hot oil and water do NOT mix
